This is why I love the science of food.  This article talks about the importance of letting your chocolate chip cookie dough sit at least 24 hours before baking, physiotherapist in order to render the dough richer tasting.  I’m going to try it (I have a gas oven here in Thailand, which makes everything all the more interesting!  I burned my first cake, a banana upside down cake which was supposed to be a present for a friend) using this recipe .

Before my brother left for Sudan, packed him this recipe, a bottle of maple syrup flavouring (add to simple sugar syrup, et voila!) and a ziploc of baking powder.  Mmmm…maybe I should make some pancakes soon…
